lecithin acyltransferase (LLAT): an enzyme that catalyzes the reversible reaction of lysolecithin and another phospholipid (e.g., phosphatidylethanolamine) to form lecithin and lysophosphatidylethanolamine; the process provides a major route in the restructuring of lecithin.
